For those looking for an extra Hobart Whisky treat, the guys fell in love with another cask when we were at the distillery. Bless the Hobart team, they’ve pulled an extremely limited 48 200mls from the cask just for the Co-op.
This limited bottling was matured in Hillrock Distillery American Oak Ex-Bourbon casks (40 and 80L) for over 3.5 years, before finishing for 17 months in a 200L American Oak Ex-Rum cask.
With a nose rich with tropical fruits and creamy toffee. A hint of raisins that you expect to find from rum a cask, adding extra sweetness and warmth to a breath of shortbread and golden syrup.
On the palate tropical fruits again upfront all come together to be met with creamy sweet vanilla, burnt brown sugar, butterscotch biscuit, and just a hint of citrus. Toffee and caramelised dates linger on moreish fairy floss sweetness and thick oils that glide on the palate. A delicious thick syrup.
