What you do to make Mango Kalakand:
Divide the milk into two equal portions and bring to a boil in separate pots. Add vinegar to one amount of the milk to split it, then add cold water. To make chena, spread a muslin cloth over a bowl and sift the curdled milk through it. Add saffron and chena to the second portion of the milk that is simmering on low heat. Reduce the mixture until it is thick with the diced mangoes and sugar. Now, add two teaspoons of ghee. Spread the mixture onto a steel plate with ghee. Serve with shredded pistachios as a garnish.
