Be sure to stop at Ruby’s Diner, conveniently located in Waverley at the corner of Taylor Street and Bronte Road. Owned by Ed Devlin and Emma Knowles, Ruby’s has recently expanded and renovated.
With more room and new artwork by local artist Steve Smith, the new Ruby’s experience incorporates a slow brew bar, raw foods, pasture raised eggs and meats, select retail products and featuring as Single Origin Roasters first flagship shop.
We proudly use and stock Single Origin Roasters, Iggys breads, Egganic eggs, Penny Fours pastries, Sonoma Breads, Mayde teas, and Bahen & co chocolate. Our slow brew bar features some of Australia’s most innovative light roasts.
Everything else from our famous chilli jam, to dressings , toppings and pickles is made with love in our kitchen to bring to you a taste that you can’t find elsewhere.
At Ruby’s Diner, we love serving you the best coffee we possibly can. That’s why we’re using Single Origin roasters.
Progressive shops use recipes like this to perfect the service of all forms of coffee. We journal daily our results for all forms of coffee and weigh our shots at 4 points of the day to check for inconsistencies. It’s just part of our daily routine to get you the best coffee we can, every time.
At Ruby’s Diner, we care about the type of food we serve. From fresh Iggy’s bread available Tuesday to Sunday, to sourcing organic veges and grass fed meat, we want to cook and serve you the best quality produce.
Our menu has something for everyone. For example, the Raw Breakfast Salad – a subtle combination of avocado, kale, activated hazelnuts and soft feta complemented with two perfectly poached eggs; it ticks all the right boxes.
