Every Bill Granger restaurant reflects the spirit we like to think of as ‘Australian’: sunny, easy-going and generous. Bill opened his first restaurant in Sydney’s Darlinghurst at the age of 24.
Twenty years later, Bill’s relaxed, friendly and oh-so-Australian approach to dining has become truly global. His infectious joy in good, fresh food offers a genuinely warm welcome to everyone, from Seoul to Honolulu, from London to Tokyo: business suits and swimsuits, prams and backpacks, high chairs and comfy chairs.
We opened bills Surry Hills under the Adina hotel on Crown Street in 1996. We picked a great spot - since then, Surry Hills has transformed itself from a quiet rag-trade area of Sydney to the centre of the city’s media and arts communities and its restaurant hot-spot. The open kitchen at bills Surry Hills is lively and fun all day: locals pick up their coffee or fresh juice on the way to work; friends chat over brunch; business lunches are held next to prams, backpacks and the occasional celebrity; and neighbourhood families drop in for an easy dinner.
