In 1998, 25-year-old Chef Gabriel Dimitriad took over Paris Go, under the guidance of his mentor and now father-in-law, Joaquim Inacio. The two worked together at France-Soir in South Yarra where Gabriel completed his apprenticeship after working for years at the Melbourne Fish Markets.
Gabriel’s passion lies in the causal and rustic nature of fine French cooking, and that is what he creates in the kitchen at Paris Go. With one of the largest French menus in Melbourne, drawing inspiration from every corner of France, Paris Go covers all tastes from Steak bearneaise to Andouillette.
